Orzo with broccolli and sun dried tomatoes

This side dish is great all by itself any time of year. Simply delicious. Serves 4.

1 C Orzo
1/3 C Sun Dried Tomatoes, rehydrated and chopped
2 T Extra Virgin Olive Oil
½ t Sea Salt
2/3 C Broccoli Florets, steamed
¼ C Grated Parmesan cheese (you may also use rice cheese, organic parmesan, or even “raw” pine nut parmesan)
2 T Fresh Basil, chopped
2 t Garlic Powder
Fresh Ground Pepper
For fun, add carmelized onions and/or grilled tempeh!

In a 2 quart pot, add water and sea salt and bring to a boil. Once boiling, add broccoli for 1-2 minutes until tender (but still very green). Remove from water with a slotted spoon and run under cold water to stop cooking. Allow water to come back to a boil. Add orzo, cook aldente, strain and rinse thoroughly. In a large bowl, toss lightly with olive oil and all other ingredients. Eat right away!
